Aged for twelve months.

Ideal as grated cheese.

"Pasta filata" cheese produced with raw and whole cow's milk.
It has a sweet and delicate taste and it is produced on
the hills of ragusa by traditional and private producers.

Aged from 3 to 6 months.

Great as starters, for matching vegetables and
for being grilled or roasted.
