The olive history
is very ancient. Its origin are very old about 6000 years. This
tree come from Siria and Palestina. The olive-tree become famous
in Greece , Turkey , Sicily and Spain thanks for Phoenix's commerce.
Following the Romans diffused this tree in Italy and around
the countries until the France. Today the olive tree is cultivated
in U.S.A , Argentina and Mexico and also in "Mediterranea" area,
where it can find the best conditions to grow .
The
"Caciocavallo Ragusano"
It
is one of the best old cheese in Sicily : The name come from
the drying system "a cavaddu" and from the name of the production
area (Ragusa). About its history: In the 1515 Carlo Trasselli
writes in "Ferdinando il Cattolico e Carlo V" about an exemption
from taxation for the "caciocavallo ragusano" and in "Note sui
Ragusei in Sicilia" and "Notaio Gaetano, F. 106" writes about
the cheese's commerce by ships. Paolo Balsamo and Filippo Garofalo
underlines the good quality of the "caciocavallo"and ricotta
and also the modican's cows. The "caciocavallo " has been recognized
by D.P.R. 1269 on 30 October 1955, by ordinance on 2nd May 1995
and has been recognized D.O and at last by regolament n. 1263
on 1st July 1996. The cheese has beneficed the title of D.O.P.
The acknowledge forecast the appellative "Ragusano" losing the
old appellative as "caciocavallo" .
